Butcher Lambs

 

In addition to show lambs, we also raise high quality butcher lambs.  How does Emsoff Livestock Co. lamb compare to store bought lamb?

 

Wholesome

You can rest assured that you are getting safe, wholesome meat when you purchase a lamb from Emsoff Livestock Co.

  • We never use growth hormones.

  • Our lambs are never fed antibiotics or treated on a routine basis.  Medications are only administered when absolutely necessary for the health and wellbeing of the animal.  In a typical year less than 10% of our lambs ever require such treatment.  Detailed records are kept on all treatments and withdrawal times are strictly followed.  While considered safe by the USDA and FDA, if you prefer a lamb that has never been treated with antibiotics, we can offer you this assurance.

  • Our lambs are fed a natural ration of fresh grass, alfalfa hay, and grain.

Quality

Our lamb is the highest quality available. We breed our sheep specifically for meat and growth characteristics, not wool, and they have consistently placed at the top end of carcass contests.  Our lamb have represented the top 22.6% for combined yield and quality grade.  Compared to lamb sold in retail markets, ours are:

  • Younger, (often 2-4 months younger than average) which means they are more tender and milder flavored.

  • Bigger and heavier muscled, which means more meat and bigger cuts.  In fact, carcass evaluations show that our average rib chops have 35% and 87% more meat than domestic and imported average rib chops, respectively!
    Grain fed, contributing to superior marbling and a milder flavor compared to range-reared lambs.

  • Bringing our customers back for more!  The number of repeat customers we get each year testifies to the quality of our lambs.

Value

Not only do you get the highest quality meat available, you also get real value.  Our 2009 lamb price is $3/lb carcass weight.

  • A 60 lb. carcass at $3/lb. will cost $180.  If you choose to have your lamb processed by a local butcher, this will cost about another $60, for a total cost of $240.  The same amount of meat (though lower quality) will typically cost you around $450 purchased in a retail market!  See the diagram below for a breakdown of this information, including how much meat you can actually expect from a 120 lb lamb.

Convenience

Purchasing a butcher lamb from Emsoff Livestock Co. is easy. 

  • When your lamb is ready for slaughter, you can decide to process it yourself.

  • Or for your convenience, we can arrange with a local butcher to have the lamb slaughtered, cut, and wrapped for you.  All you have to do is pick up your boxed, frozen meat a week later, cut just how you want it.

  • Not sure you want a whole lamb?  No problem.  We can arrange for another buyer to split a lamb with you.
